Ingredients
- 3 cups all purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup baking cocoa
- 3 medium eggs, beaten
- 2 cups grated (about 1 large) zucchini
- 1 cup vegetable oil
- 1 cup chopped pecans
- 1 teaspoon vanilla extract

Step 1preheat oven to 325.

Step 2in a large bowl, mix together flour, sugar, baking soda, cinnamon, salt, baking powder,and cocoa. in another bowl, combine remaining ingredients. stir zucchini mixture into flour mixture.

Step 3grease well and lightly flour 2 9x5 inch loaf pans, divide mixture evenly between loaf pans.

Step 4bake 55-60 minutes, or until wooden toothpick inserted in center comes out clean.

Step 5cool 5 minutes on a rack then remove from pan. cool completely before slicing
