chocolate zucchini bread
I made this when my children were little & finicky about vegetables. It was so chocolatey. They never realized it had zucchini in it. I just cam across it again. Its a winner

Ingredients
- 1 cup flour
- 1 cup whole wheat flour
- 1/4 cup unsweetened cocoa
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 eggs
- 1 cup sugar
- 3/4 cup applesauce
- 1/4 cup canola oil
- 1 teaspoon vanilla extract
- 1 ounce unsweetened chocolate (melted)
- 1/2 cup chopped walnuts
- 2 cups grated zucchini(squeeze well with a dishcloth)
How To Make chocolate zucchini bread

Step 1Preheat oven to 325 degrees

Step 2Spray 2 8 1/2X4 1/2 inch loaf pans with cooking spray

Step 3Whisk all purpose flour, whole wheat flour, cocoa, baking powder, baking soda & salt ina large bowl

Step 4Whisk eggs, sugar, applesauce, oil, vanilla & melted chocolate in another large bowl until blended.

Step 5Add the dry ingredients & stir with a rubber Spota until just combined

Step 6Pour the batter into prepared pans. Bake the loaves 55-60 minutes

Step 7Let cool for 10 minutes. The onto wire rack to cool completely
