chocolate zucchini bread

I made this when my children were little & finicky about vegetables. It was so chocolatey. They never realized it had zucchini in it. I just cam across it again. Its a winner

Ingredients

  • 1 cup flour
  • 1 cup whole wheat flour
  • 1/4 cup unsweetened cocoa
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup sugar
  • 3/4 cup applesauce
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
  • 1 ounce unsweetened chocolate (melted)
  • 1/2 cup chopped walnuts
  • 2 cups grated zucchini(squeeze well with a dishcloth)

How To Make chocolate zucchini bread

  • Step 1
    Preheat oven to 325 degrees
  • Step 2
    Spray 2 8 1/2X4 1/2 inch loaf pans with cooking spray
  • Step 3
    Whisk all purpose flour, whole wheat flour, cocoa, baking powder, baking soda & salt ina large bowl
  • Step 4
    Whisk eggs, sugar, applesauce, oil, vanilla & melted chocolate in another large bowl until blended.
  • Step 5
    Add the dry ingredients & stir with a rubber Spota until just combined
  • Step 6
    Pour the batter into prepared pans. Bake the loaves 55-60 minutes
  • Step 7
    Let cool for 10 minutes. The onto wire rack to cool completely
