This comes from my Lou, I have known her forever at this point in our lives. She made this way back in another era I thought OMG what are doing? Well okay I'm off to get into mischief. Later I got to taste such yum and every few years I yearn for it. Finally I have it and she told me about this place too. Happy Lughnasadh!!! Personal notes: I used more nuts, Ghirardelli un-sweet Dark Coco. I turned the oven off @ 50minutes and let it continue to sit in oven till hit the 1hr 20min part. It is perfect yum with a touch of butter.

Ingredients

  • 1/2 teaspoon salt
  • 1 1/4 cups flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 cup 1/4 1/3 cp unsweeted coco
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup peeled shredded zucchini (green one lou says so)
  • 2 - eggs
  • 1/4 cup milk
  • 1/3 cup unsalted butter
  • 3/4 cup pecans (chopped)

How To Make chocolate zucchini bread

  • Step 1
    Preheat oven to 350 degrees, Grease Bread pan and flour. Sift all dry ingredients in one bowl.
  • Step 2
    Get another Big O Bowl mix butter and sugar (I suggest the Kitchen Aid) until creamy. Slowly add the rest of wet ingredients
  • Step 3
    Add the dry ingredients, adding Pecan’s last. Pour into bread pans cook 1 hour 15-30 minutes, checking about 50minutes.
