My husband loves corn bread and I came across this recipe in one of my grandmother's recipe books, it is so yummy and very easy to make. It was a huge hit with my family! Hope you enjoy it.

onion, chopped
2 Tbsp
1 c
sour cream
1/2 can(s)
whole kernel corn, drained
1/2 can(s)
cream-style corn
pinch of salt
1/8 tsp
1/2 pkg
corn bread/muffin mix
1 medium
jalapeno pepper, minced
1 c
shredded cheddar cheese, divided

How to Make Cheesy Jalapeno Corn Spoon Bread


  • 1In a skillet saute onion in butter until tender; set aside.
  • 2In a large bowl, beat the egg; add sour cream, both the corns, salt and pepper. Stir in the corn bread muffin mix just until blended. Fold in onions and jalapeno and half of the cheese.
  • 3Transfer to a greased shallow baking dish. Sprinkle with the remaining cheese. Bake uncovered at 350° for 30 to 35 minutes or until a toothpick inserted near the center comes out clean. Cool slightly before serving.
