Growing up in the Northern Ohio we seldom had cornbread but upon moving to Tennessee and then Mississippi I found they seldom served a meal without cornbread or biscuits. Sure didn't take me long to find out what I had been missing. I especially like the cornbread with all the extra goodies added. You know the ones you could make a meal on. Here is one I am especially found of. Hope you enjoy.

  • 1 c
    yellow cornmeal
  • 1 c
    all purpose flour
  • 1/2 tsp
  • 4 tsp
    baking powder
  • 1/4 c
  • 1/4 c
    oil, vegetable
  • 1 large
  • 1 c
  • 1 c
    whole kernal corn, drained
  • 1 c
    cheddar cheese, shredded
  • 1/4 c
    onion, finely chopped
  • 1/4 c
    green bell pepper, finely chopped

How to Make Cheesy Cornbread


  1. Pre-heat oven to 425 degrees. Grease a 9x9 pan.
  2. Combine all ingredients except cheese, corn, onion and green pepper. Mix until fairly smooth.
  3. Add cheese, corn, onion, and green pepper. Pour into greased pan and bake at 425 degrees for 20 to 25 minutes or until toothpick in center comes out clean.
