cheesy cornbread

Growing up in the Northern Ohio we seldom had cornbread but upon moving to Tennessee and then Mississippi I found they seldom served a meal without cornbread or biscuits. Sure didn't take me long to find out what I had been missing. I especially like the cornbread with all the extra goodies added. You know the ones you could make a meal on. Here is one I am especially found of. Hope you enjoy.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all purpose flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1/4 cup sugar
  • 1/4 cup oil, vegetable
  • 1 large egg
  • 1 cup milk
  • 1 cup whole kernal corn, drained
  • 1 cup cheddar cheese, shredded
  • 1/4 cup onion, finely chopped
  • 1/4 cup green bell pepper, finely chopped

How To Make cheesy cornbread

  • Step 1
    Pre-heat oven to 425 degrees. Grease a 9x9 pan.
  • Step 2
    Combine all ingredients except cheese, corn, onion and green pepper. Mix until fairly smooth.
  • Step 3
    Add cheese, corn, onion, and green pepper. Pour into greased pan and bake at 425 degrees for 20 to 25 minutes or until toothpick in center comes out clean.
