Growing up in the Northern Ohio we seldom had cornbread but upon moving to Tennessee and then Mississippi I found they seldom served a meal without cornbread or biscuits. Sure didn't take me long to find out what I had been missing. I especially like the cornbread with all the extra goodies added. You know the ones you could make a meal on. Here is one I am especially found of. Hope you enjoy.

Ingredients

1 c
yellow cornmeal
1 c
all purpose flour
1/2 tsp
salt
4 tsp
baking powder
1/4 c
sugar
1/4 c
oil, vegetable
1 large
egg
1 c
milk
1 c
whole kernal corn, drained
1 c
cheddar cheese, shredded
1/4 c
onion, finely chopped
1/4 c
green bell pepper, finely chopped

How to Make Cheesy Cornbread

Step-by-Step

  • 1Pre-heat oven to 425 degrees. Grease a 9x9 pan.
  • 2Combine all ingredients except cheese, corn, onion and green pepper. Mix until fairly smooth.
  • 3Add cheese, corn, onion, and green pepper. Pour into greased pan and bake at 425 degrees for 20 to 25 minutes or until toothpick in center comes out clean.
