It took some tweaking to get it just right. I make it every time I make my chili and my family absolutely loves it.

DRY INGREDIENTS

2 cyellow cornmeal
-
1 1/2 call purpose flour
-
1/2 cwhole wheat flour
-
3/4 csugar
-
2 Tbspbaking powder
-
2 tspsalt
-
WET INGREDIENTS
-
3/4 colive oil, light
-
1 2/3 cbuttermilk
-
3eggs
How to Make Buttermilk Cornbread
- Preheat oven to 425°
- Lightly spray 13x9" baking pan with non-stick spray
- Combine all dry ingredients in a large bowl
- In a separate bowl, combine remaining 3 ingredients and beat with whisk
- Form a well in the dry mixture and add liquid mixture
- Beat with whisk until smooth
- Pour batter evenly in pan
- Bake at 425° for 20-25 min until knife entered in center comes out clean
