It took some tweaking to get it just right. I make it every time I make my chili and my family absolutely loves it.

Ingredients

DRY INGREDIENTS

2 c
yellow cornmeal
1 1/2 c
all purpose flour
1/2 c
whole wheat flour
3/4 c
sugar
2 Tbsp
baking powder
2 tsp
salt

WET INGREDIENTS

3/4 c
olive oil, light
1 2/3 c
buttermilk
3
eggs

How to Make Buttermilk Cornbread

Step-by-Step

  • 1Preheat oven to 425°
  • 2Lightly spray 13x9" baking pan with non-stick spray
  • 3Combine all dry ingredients in a large bowl
  • 4In a separate bowl, combine remaining 3 ingredients and beat with whisk
  • 5Form a well in the dry mixture and add liquid mixture
  • 6Beat with whisk until smooth
  • 7Pour batter evenly in pan
  • 8Bake at 425° for 20-25 min until knife entered in center comes out clean
