It took some tweaking to get it just right. I make it every time I make my chili and my family absolutely loves it.

Ingredients

  • DRY INGREDIENTS
  • 2 cups yellow cornmeal
  • 1 1/2 cups all purpose flour
  • 1/2 cup whole wheat flour
  • 3/4 cup sugar
  • 2 tablespoons baking powder
  • 2 teaspoons salt
  • WET INGREDIENTS
  • 3/4 cup olive oil, light
  • 1 2/3 cups buttermilk
  • 3 - eggs

How To Make buttermilk cornbread

  • Step 1
    Preheat oven to 425°
  • Step 2
    Lightly spray 13x9" baking pan with non-stick spray
  • Step 3
    Combine all dry ingredients in a large bowl
  • Step 4
    In a separate bowl, combine remaining 3 ingredients and beat with whisk
  • Step 5
    Form a well in the dry mixture and add liquid mixture
  • Step 6
    Beat with whisk until smooth
  • Step 7
    Pour batter evenly in pan
  • Step 8
    Bake at 425° for 20-25 min until knife entered in center comes out clean
