It took some tweaking to get it just right. I make it every time I make my chili and my family absolutely loves it.

Ingredients

  • DRY INGREDIENTS

  • 2 c
    yellow cornmeal
  • 1 1/2 c
    all purpose flour
  • 1/2 c
    whole wheat flour
  • 3/4 c
    sugar
  • 2 Tbsp
    baking powder
  • 2 tsp
    salt
  • WET INGREDIENTS

  • 3/4 c
    olive oil, light
  • 1 2/3 c
    buttermilk
  • 3
    eggs

How to Make Buttermilk Cornbread

Step-by-Step

  1. Preheat oven to 425°
  2. Lightly spray 13x9" baking pan with non-stick spray
  3. Combine all dry ingredients in a large bowl
  4. In a separate bowl, combine remaining 3 ingredients and beat with whisk
  5. Form a well in the dry mixture and add liquid mixture
  6. Beat with whisk until smooth
  7. Pour batter evenly in pan
  8. Bake at 425° for 20-25 min until knife entered in center comes out clean
