This cornbread is made in a electric skillet. I believe you could still cook in your oven at a low temperature .

Ingredients

1 c
blueberries
1 c
corn meal
1 1/2 c
sifted flour
1/4 c
sugar
2 tsp
baking powder
1 1/2 c
milk
2
eggs
1/4 c
shortening

How to Make Blueberry Corn Bread

Step-by-Step

  • 1Wash and drain blueberries. Put corn meal in a bowl and sift in dry ingredients and a dash of salt. Add remaining ingredients and mix well. Fold in blueberries.
  • 2Grease electric skillet and preheat to 250 degrees. Pour batter in, cover and cook with vent open for 25 minutes.
