Ingredients
- 1 3\4 teaspoons active dry yeast
- 1 1/3 cups warm water
- 2 tablespoons olive oil plus more for brushing
- 3 3/4 cups all purpose flour
- 1 1/2 teaspoons salt
- 1/2 cup grated parmesan cheese
How To Make big ole bill's grissini al formaggio

Step 1Stir the yeast into the water in a mixer bowl. Let stand until foamy, about ten minutes.

Step 2Mix in the oil with a paddle attachment, then add the flour and salt and mix until the dough comes together.

Step 3Change to a dough hook and knead at low speed about three minutes. Add the parmesan cheese to the dough, and finish kneeing by hand on a lightly floured surface.

Step 4First rise...pat the dough with your hand into a 14 x 4 inch rectangle on a well-floured surface. Lightly brush the top with oil. Cover with plastic wrap and let rise until doubled in size...about an hour.

Step 5Cut the dough crosswise into four equal sections. Then cut each section crosswise into five strips the size of a fat finger each.

Step 6Pick up each strip, hold each end with your finger, pull and stretch to fit crosswise width) on a baking sheet. Place the strips several inches apart on a lightly oiled baking sheet. (I find it easier to use the back of the baking sheet unless you have rimless baking sheets.

Step 7Preheat oven to 450 degrees and bake the breadsticks for 20 minutes. Cool on racks.
