This recipe can also be used to make pancakes. My children love to put peanut butter on theirs as an added topping!!

Ingredients

  • 3 medium
    bananas, overripe (mashed)
  • 2 Tbsp
    sugar
  • 2 tsp
    lemon juice
  • 2
    egg yolks, reserve whites
  • 1 c
    self rising flour
  • 1/3 tsp
    cinnamon
  • 1 pinch
    salt

How to Make Banana Waffles

Step-by-Step

  1. Mix all ingredients, except egg whites and pinch of salt, in a large bowl.
  2. In a seperate bowl, whisk the egg whites and a pinch of salt until a stiff peak is formed.
  3. Fold whipped egg white mixture into banana mixture with a large spoon.
  4. Pour batter to make waffles or pancakes and top with your favorite toppings!!
