When my bananas are too ripe to eat I put them in the freezer and use them for banana nut bread. Usually 2 bananas will equal one cup. No need to mash the bananas.

Ingredients
- 1/3 cup shortening
- 1/2 cup sugar
- 2 - eggs
- 1 3/4 cups flour
- 1 teaspoon baking-powder
- 1/2 teaspoon soda
- 1/2 teaspoon salt
- 1 cup mashed ripe banans
- 1/2 cup chopped walnuts
How To Make banana-nut bread

Step 1Cream together shortening and sugar; add eggs and beat well. Sift together dry ingredients; add to creamed mixture alternately with banana, blending well after each addition. Stir in nuts. Pour into well-greased 8x8-inch pan. Bake in moderate oven (350 degrees) 40 to 45 minutes till done.
