Ingredients

  • 2 large
    baked potatoes
  • 1
    french bread
  • 4 slice
    bacon (low sodium or turkey opt)
  • 8 oz
    sour cream (ff or low fat opt.)
  • ·
    mezzeta banana pepper rings
  • 4 oz
    feta cheese
  • 4 oz
    cheddar cheese, grated (low fat opt)
  • ·
    onion slices, roasted
  • 4 Tbsp
    unsalted butter

How to Make Baked Potato in a bun

Step-by-Step

  1. Pop two large baking potatoes in the micro. Let cool until you can handle them. Chop it into bite size pcs.
  2. Cook bacon and crumble. Saute` onion slices.
  3. Cut into bread at an angle from both sides, do not cut all the way through. Hollow out some of the bread inside to make a "boat". Spread butter on and put under broiler for a couple of minutes till butter melts and bread is toasted, spread on sour cream.
  4. Place into bread: baked potato, feta cheese, cheddar cheese, bacon, onions and pop back under broiler for another two minutes, top with sliced banana peppers.
