backyard grilled bacon-cheddar loaf

With bacon and cheddar, what's not to love?! I checked before posting this recipe and all similar recipes are pinched from other sites. This is our family version that I love to make when we grill out. It is quick, easy, and doesn't heat up your kitchen. That being said, it is also yummy oven baked @ 350 F for 10-15 minutes (until bread is heated through & cheese is melted). Try substituting your favorite cheese for the cheddar. Serving note: I love to serve this along side my entree' and my "Oh So Simple Summer Corn Salad". Add a glass of frosty iced tea and call over the neighbors!

Ingredients

  • 1 - loaf (16 oz.) baquette style french bread
  • 1/2 cup butter, softened
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices bacon, crisp-cooked and crumbled
  • 2 - green onions, sliced
  • 2 teaspoons mustard, your favorite kind, (we like southwest spicy!)
  • 1 teaspoon freshly squeezed lemon juice

How To Make backyard grilled bacon-cheddar loaf

  • Step 1
    Using a bread knife, cut loaf crosswise into 1-inch slices, cutting down to, but not through, the bottom crust.
  • Step 2
    In a small bowl, stir together butter, cheese, bacon, onions, mustard and lemon juice. Spread mixture on both sides of slices. Wrap loaf tightly w/ heavy aluminum foil.
  • Step 3
    Heat gas grill to medium or prepare charcoal grill w/ medium coals. Place wrapped loaf on grill rack. Grill, uncovered, for 10 minutes, turning once. See above (personal note) to bake in oven.
