Ingredients

1 - 8 oz
loaf baguette style french bread
3 Tbsp
olive oil
4
garlic cloves, minced
1 tsp
snipped fresh rosemary
1 - 8 oz
jar apricot preserves
1/2 tsp
finely grated lemon peel
8 oz
brie cheese thinly sliced
1/3 c
chopped almonds, lightly toasted

How to Make Apricot Almond Brueschetta with Melted Brie

Step-by-Step

  • 1Cut bread diagonally into 1/2 inch slices. Stir together olive oil, garlic, and rosemary; brush mixture over bread. Bake at 400 degrees, until bread just starts to brown. Combine preserves and lemon peel and spread on top of garlic mixture, top with slice of Brie and toasted almonds. Return to oven and bake until cheese starts to melt.
