Ingredients
- APPLE TOPPING
- 2 tablespoons butter
- 1 pound apples, peeled, cored and sliced 1/2" thick
- 1 tablespoon lemon juice
- 1/4 cup brown sugar
- BUTTERMILK PANCAKE BATTER
- 1 1/2 cups clour
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 1 dash salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking soda
- 1 cup buttermilk
- 1 - egg
- 1/4 cup milk
How To Make apple pancake

Step 1APPLE TOPPING: Heat butter in large cast iron skillet over medium heat. Add apples, lemon juice and brown sugar. Cook stirring until crisp tender. About 5 minutes. Set aside off burner.

Step 2PANCAKE: Combine milk, egg and buttermilk in medium bowl. Whisk in dry ingredients. Stir until well blended.

Step 3Spoon pancake mixture on top of apples in skillet spreading evenly to side of skillet.

Step 4Bake at 375 degrees for 20 - 25 minutes or until set and golden on top and wooden toothpick inserted in center come out clean

Step 5Let set 5 minutes. Loosen sides with spatula.

Step 6Invert on serving platter. Garnish with whipped cream if desired.

Step 7HINT: Sometimes I substitute a can of apple pie filling for the apples mixture. If doing this, pour pie filling into buttered skillet and proceed with pancake directions.
