Ingredients

  • APPLE TOPPING
  • 2 tablespoons butter
  • 1 pound apples, peeled, cored and sliced 1/2" thick
  • 1 tablespoon lemon juice
  • 1/4 cup brown sugar
  • BUTTERMILK PANCAKE BATTER
  • 1 1/2 cups clour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1 dash salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1 cup buttermilk
  • 1 - egg
  • 1/4 cup milk

How To Make apple pancake

  • Step 1
    APPLE TOPPING: Heat butter in large cast iron skillet over medium heat. Add apples, lemon juice and brown sugar. Cook stirring until crisp tender. About 5 minutes. Set aside off burner.
  • Step 2
    PANCAKE: Combine milk, egg and buttermilk in medium bowl. Whisk in dry ingredients. Stir until well blended.
  • Step 3
    Spoon pancake mixture on top of apples in skillet spreading evenly to side of skillet.
  • Step 4
    Bake at 375 degrees for 20 - 25 minutes or until set and golden on top and wooden toothpick inserted in center come out clean
  • Step 5
    Let set 5 minutes. Loosen sides with spatula.
  • Step 6
    Invert on serving platter. Garnish with whipped cream if desired.
  • Step 7
    HINT: Sometimes I substitute a can of apple pie filling for the apples mixture. If doing this, pour pie filling into buttered skillet and proceed with pancake directions.
