apple cheddar nut bread

I love apples and cheddar cheese,it is a great combo. I had to try this recipe which I found in my All-You magazine.The bread is moist and so good,my kids were glad I tried it, its a keeper!

Ingredients

  • 2 cups - sifted all-purpose flour
  • 1 tsp. - baking powder
  • 1 tsp. - baking soda
  • 1/2 tsp. - salt
  • 8 tbsp - unsalted butter(1 stick)or salted butter
  • 1/2 cup - sugar
  • 2 - large eggs
  • 1/4 tsp - ground anise,optional(i replaced it with 1/4tsp.vanilla extract)
  • 1 - small granny smith apple, peeled,cored,shredded(about 1 cup)i just chopped my apple real fine and added
  • 1 cup - mild cheddar shredded cheese
  • 1/2 cup - chopped pecans

How To Make apple cheddar nut bread

  • Step 1
    1.PREHEAT oven to 350 degrees MIST an 8" x 4" loaf pan with cooking spray(I used Bakers Joy)
  • Step 2
    In a small bowl, SIFT together flour,baking powder,baking soda and salt. Using a electric mixer on medium-high speed,BEAT butter and salt until fluffy and smooth, about 3 minutes.
  • Step 3
    ADD eggs one at a time,BEATING well after each. STIR flour mixture into butter mixture. ADD anise,if desired,shredded apple, mild cheddar cheese and pecans,mixing with a wooden spoon just enough to blend.
  • Step 4
    TRANSFER batter to loaf pan. BAKE for 40-to 55 minutes,or until cake tester inserted in center comes out clean.
  • Step 5
    NOTE: Recipe does not double well. Cool Bread,slice and enjoy. Can be served with cold milk, hot coffee,hot tea and iced tea. Enjoy!
