I use this for all variety of things. Chicken, Fish, Pork Tenderloins, Chicken Fried Steak and Veggies or Mushrooms. A large jar of this is a staple in my kitchen.

Ingredients

  • 1 cup flour
  • 1/3 cup corn meal yellow
  • 1 teaspoon garlic powder not salt
  • 1 teaspoon onion powder not salt
  • 1 1/2 teaspoons poultry seasoning dry
  • 1 teaspoon paprika, sweet mild (optional)
  • 2 teaspoons parsley dry
  • 1 teaspoon sage ground or dry
  • 1 1/2 tablespoons salt you need salt for flavor
  • 2/3 teaspoon black pepper

How To Make all purpose breading or coating

  • Step 1
    Mix and stir all ingredients in a jar for shelf use. This is a staple in my kitchen.
  • Step 2
    I dust sectioned Chicken Wings and place on cookie sheet or pizza platter for oven baking, at 325 degrees for 1 hour.
  • Step 3
    For a slightly thicker batter dust then allow to set for 10 minutes for breading to absorb then dust again.
  • Step 4
    For still thicker batter yet (Used when I deep fry) I dust then dip in milk and egg batter and dust again.
  • Step 5
    These seasonings work well with all sorts of foods. Adjust the amounts to your liking. For Buffalo Wings I may dump in an additional 2 or 3 tablespoons of Paprika for coloring to a portioned amount.
  • Step 6
    I normally cook with very little salt and watch my salt intake but for breading you need it to bring out the flavor. You could tailor this to your particular liking.
