These muffins are healthy, moist & delicious. I hope your friends & family enjoy them as much as mine does. Nuts, chocolate chips, blueberries, etc. can be added to change up the flavor.

Ingredients

  • 1 cup whole wheat pastry flour
  • 1 cup oat flour
  • 1/2 cup oats
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 3 large eggs, beaten
  • 1 teaspoon vanilla
  • 5-6 - bananas, mashed
  • 1 cup coconut sugar (or 1/2c stevia or 1 cup brown sugar)
  • 1/4 cup melted butter or coconut oil
  • 1/2 cup plain or vanilla greek yogurt
  • 1/4 cup honey

How To Make whole grain banana muffins

  • Step 1
    Preheat oven to 350 degrees. Grease muffin cups or use paper liners.
  • Step 2
    In a large bowl, combine flours, oats, baking powder, baking soda, salt, cinnamon and nutmeg. Make a well in center of flour mixture and set aside.
  • Step 3
    In a medium bowl combine remaining ingredients. Add egg mixture to flour mixture. Stir just until moistened (batter should be a little lumpy). Spoon into muffin cups. Bake 20-25 minutes.
  • Step 4
    Options - adding nuts, chocolate chips, blueberries or pineapple is a delicious change.
