These muffins are healthy, moist & delicious. I hope your friends & family enjoy them as much as mine does. Nuts, chocolate chips, blueberries, etc. can be added to change up the flavor.

Ingredients

  • 1 c
    whole wheat pastry flour
  • 1 c
    oat flour
  • 1/2 c
    oats
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1/8 tsp
    nutmeg
  • 3 large
    eggs, beaten
  • 1 tsp
    vanilla
  • 5-6
    bananas, mashed
  • 1 c
    coconut sugar (or 1/2c stevia or 1 cup brown sugar)
  • 1/4 c
    melted butter or coconut oil
  • 1/2 c
    plain or vanilla greek yogurt
  • 1/4 c
    honey

How to Make WHOLE GRAIN BANANA MUFFINS

Step-by-Step

  1. Preheat oven to 350 degrees. Grease muffin cups or use paper liners.
  2. In a large bowl, combine flours, oats, baking powder, baking soda, salt, cinnamon and nutmeg. Make a well in center of flour mixture and set aside.
  3. In a medium bowl combine remaining ingredients. Add egg mixture to flour mixture. Stir just until moistened (batter should be a little lumpy). Spoon into muffin cups. Bake 20-25 minutes.
  4. Options - adding nuts, chocolate chips, blueberries or pineapple is a delicious change.
