1 cwhole wheat pastry flour

1 coat flour

1/2 coats

1 1/2 tspbaking powder

1/2 tspbaking soda

1/4 tspsalt
-
1/2 tspcinnamon
-
1/8 tspnutmeg

3 largeeggs, beaten
-
1 tspvanilla
-
5-6bananas, mashed
-
1 ccoconut sugar (or 1/2c stevia or 1 cup brown sugar)

1/4 cmelted butter or coconut oil
-
1/2 cplain or vanilla greek yogurt
-
1/4 choney
How to Make WHOLE GRAIN BANANA MUFFINS
- Preheat oven to 350 degrees. Grease muffin cups or use paper liners.
- In a large bowl, combine flours, oats, baking powder, baking soda, salt, cinnamon and nutmeg. Make a well in center of flour mixture and set aside.
- In a medium bowl combine remaining ingredients. Add egg mixture to flour mixture. Stir just until moistened (batter should be a little lumpy). Spoon into muffin cups. Bake 20-25 minutes.
- Options - adding nuts, chocolate chips, blueberries or pineapple is a delicious change.
