egg yolks
1 c
1 lb
extra sharp cheddar
1 stick
3 Tbsp
dijon mustard
english muffins, halved
tomato slices
1 dash(es)
parsley for garnish

How to Make Welsh Rarebit


  • 1Place 4 yolks in saucepan on low continually whisking for 3 minutes.
  • 2Then add the stick of butter, raise heat to low/medium. Continue whisking.
  • 3In an oven of 300 degrees, place the halved muffins, buttered face down.
  • 4Whisk in mustard. Raise heat to medium.
  • 5Whisk in cheese a quarter at a time until all is in and thick.
  • 6Add cream. Whisk until an even sauce. Then add paprika to taste. If you let it sit, it will separate. Just whisk more over heat.
  • 7To serve per person, two slices of English muffin with two slices of tomato each side of the muffin. Ladle on sauce, garnish with parsley.
  • 8I recommend serving with my other recipe, as seen in picture.
