welsh rarebit

Ingredients
- 4 - egg yolks
- 1 cup cream
- 1 pound extra sharp cheddar
- 1 stick butter
- 3 tablespoons dijon mustard
- 6 - english muffins, halved
- 24 - tomato slices
- 1 dash paprika
- - parsley for garnish
How To Make welsh rarebit

Step 1Place 4 yolks in saucepan on low continually whisking for 3 minutes.

Step 2Then add the stick of butter, raise heat to low/medium. Continue whisking.

Step 3In an oven of 300 degrees, place the halved muffins, buttered face down.

Step 4Whisk in mustard. Raise heat to medium.

Step 5Whisk in cheese a quarter at a time until all is in and thick.

Step 6Add cream. Whisk until an even sauce. Then add paprika to taste. If you let it sit, it will separate. Just whisk more over heat.

Step 7To serve per person, two slices of English muffin with two slices of tomato each side of the muffin. Ladle on sauce, garnish with parsley.
