Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 6/8 cup light brown sugar
  • 1 large egg, separated
  • 1/2 cup honey
  • 4 tablespoons milk
  • - caster sugar (superfine), for dusting

How To Make welsh honey and spice cakes

  • Step 1
    Preheat oven to 400F. Butter muffin tin cups (18 total) or line with paper cupcake liners.
  • Step 2
    Sift flour, cinnamon and baking soda into a large mixing bowl.
  • Step 3
    In another bowl, with electric mixer, beat butter and sugar until light and fluffy. Beat in egg yolk and then gradually beat in honey.
  • Step 4
    With a wooden spoon, fold in flour mixture, plus milk to make a soft mixture.
  • Step 5
    In a separate bowl, with clean beaters, beat egg whites until stiff peaks form. Fold in batter.
  • Step 6
    Divide batter evenly among muffin cups or liners.
  • Step 7
    Bake 15-20 minutes, or until firm to touch and golden brown.
  • Step 8
    Place on wire rack to cool and dust with caster sugar. Cool completely.
