vera’s muffins

This recipe came from my grandma shortly before she passed away.. she had me make them for her on one of the last times I visited. They are very good, and I treasure the memory!! Her doctor wanted her to eat more fiber and a family member shared this recipe with her. I make them often as they are a nice snack to take in my lunch bag!! Not too sweet and very tasty! .. I think a bit of cinnamon in these would be good but I keep forgetting to try it ???????

Ingredients For vera’s muffins

  • 1 c
    multi-grain hot cereal, uncooked (i use our store brand)
  • 1 c
    all purpose flour
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 c
    sugar
  • 1 c
    shredded carrots
  • 1 c
    peeled and chopped apples
  • 1/2 c
    milk (can use buttermilk)
  • 2 lg
    eggs beaten
  • 1/4 c
    oil
  • 1 Tbsp
    vanilla extract

How To Make vera’s muffins

    Preheat oven to 400 degrees.

    Grease muffin tin or use cupcake liners.
  • 3
    Mix all dry ingredients and then stir in the wet. Batter will be thick.

    Fill muffins half way. Bake 20-25 minutes
