vera’s muffins
This recipe came from my grandma shortly before she passed away.. she had me make them for her on one of the last times I visited. They are very good, and I treasure the memory!! Her doctor wanted her to eat more fiber and a family member shared this recipe with her. I make them often as they are a nice snack to take in my lunch bag!! Not too sweet and very tasty! .. I think a bit of cinnamon in these would be good but I keep forgetting to try it ???????

Ingredients
- 1 cup multi-grain hot cereal, uncooked (i use our store brand)
- 1 cup all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1 cup shredded carrots
- 1 cup peeled and chopped apples
- 1/2 cup milk (can use buttermilk)
- 2 large eggs beaten
- 1/4 cup oil
- 1 tablespoon vanilla extract
How To Make vera’s muffins

Step 1Preheat oven to 400 degrees.

Step 2Grease muffin tin or use cupcake liners.

Step 3Mix all dry ingredients and then stir in the wet. Batter will be thick.

Step 4Fill muffins half way. Bake 20-25 minutes
