Sweet oatmeal-maple muffins
1Heat oven to 400. spray a 12-cup muffrin pan w/ cooking spray. In bowl, combine flour, baking powder, salt and cinnamon.
2In another bowl, combine oats and milk, let stand 5 mins. Stir maple syrup, butter and egg into oats mix. Add oat mix into flour mix. Stir until just moistened.
3Fold 1/2 of the pecans into mix. Spoon batter into cups, 2/3-full. Sprinkle w/ remaining pecans. Bake 15-18 mins, or until a toothpick inserted in center comes out clean. Serve warm.
