This delicious breakfast muffin is great with a cuppa tea. It has all the taste of guilty cupcakes, but all the health of wholesome muffins. Save this recipe. Husband and Child approved!

Ingredients

  • DRY INGREDIENTS
  • 2 1/2 cups flour
  • 3 tablespoons ground flaxseed
  • 1/2 cup oatmeal
  • 2 tablespoons wheat germ
  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon sea salt
  • 1 tablespoon cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1/2 teaspoon clove, ground
  • 1/2 cup sultana (yellow raisins)
  • WET INGREDIENTS
  • 2 tablespoons vanilla
  • 1 teaspoon molasses
  • 1 tablespoon lemon juice, fresh
  • 1 - egg
  • 1 cup whole milk
  • MISCELLANEOUS
  • - sugar for sprinkling

How To Make sugar-crusted sultana & spice oatmeal muffins

  • Step 1
    Preheat oven to 375F.
  • Step 2
    Add all dry ingredients to a mixing bowl and mix well with a fork.
  • Step 3
    Add all wet ingredients. Then mix well.
  • Step 4
    Use cupcake liners or grease muffin pan. Spoon batter 3/4 full.
  • Step 5
    Sprinkle with sugar before placing in oven. Do not stir.
  • Step 6
    Bake until a toothpick comes out clean.
