strawberry ambrosia muffins
I found this recipe 35 years ago when I subscribed to a monthly recipe packet club which no longer exists. I love these muffins, they're different and delicious!

Ingredients
- 2 eggs
- 1/2 cup vegetable oil
- 3/4 cup sugar
- 1 package (10 oz) frozen sliced strawberries
- 1-1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2/3 cup flaked coconut
How To Make strawberry ambrosia muffins

Step 1Beat eggs until light. Blend in oil, sugar, and strawberries.

Step 2Stir together flour, baking soda, and salt in large bowl.

Step 3Stir in strawberry mixture and coconut just until moistened.

Step 4Spoon into muffin cups with paper liners, about 3/4 full.

Step 5Bale at 400F for 20-25 minutes. Remove from pans. Serve warm.
