This is a nice little warm muffin recipe for using up left over rice that I found in Mom's notebook. Easy and straight forward. Enjoy!

Ingredients

  • SIFT TOGETHER:
  • 1 cup flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • DILUTE AND COMBINE:
  • 2 cups boiled rice
  • 1 cup milk
  • 1 tablespoon butter
  • 3 - egg yolks
  • FOLD IN:
  • 3 - egg whites, beaten stiff

How To Make rice muffins

  • Step 1
    Sift the dry ingredients (flour, sugar, salt, baking powder) and make a well
  • Step 2
    Dilute the rice with milk, butter, and egg yolks, stirring to incorporate, then pour into the well in the dry ingredients and combine all
  • Step 3
    Fold in the three egg whites beaten stiff
  • Step 4
    Bake in muffin tins at 375 F until done (probably about 10-12 minutes or so, I would guess -- you will have to test the first batch and record the time for future reference)
