How to Make Rice Muffins
- 1Sift the dry ingredients (flour, sugar, salt, baking powder) and make a well
- 2Dilute the rice with milk, butter, and egg yolks, stirring to incorporate, then pour into the well in the dry ingredients and combine all
- 3Fold in the three egg whites beaten stiff
- 4Bake in muffin tins at 375 F until done (probably about 10-12 minutes or so, I would guess -- you will have to test the first batch and record the time for future reference)
