rice muffins
This is a nice little warm muffin recipe for using up left over rice that I found in Mom's notebook. Easy and straight forward. Enjoy!

Ingredients
- SIFT TOGETHER:
- 1 cup flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking powder
- DILUTE AND COMBINE:
- 2 cups boiled rice
- 1 cup milk
- 1 tablespoon butter
- 3 - egg yolks
- FOLD IN:
- 3 - egg whites, beaten stiff
How To Make rice muffins

Step 1Sift the dry ingredients (flour, sugar, salt, baking powder) and make a well

Step 2Dilute the rice with milk, butter, and egg yolks, stirring to incorporate, then pour into the well in the dry ingredients and combine all

Step 3Fold in the three egg whites beaten stiff

Step 4Bake in muffin tins at 375 F until done (probably about 10-12 minutes or so, I would guess -- you will have to test the first batch and record the time for future reference)
