Ingredients

  • 3 cups raisin bran
  • 1-1/2 cup 2% milk
  • 2 large eggs, beaten
  • 1/2 cup honey
  • 1/4 cup extra virgin olive oil
  • 1 1/2 cups all purpose flour
  • 1-1/2 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

How To Make raisin bran muffins (sallye)

  • Step 1
    Preheat oven to 400º F
  • Step 2
    Pour the milk over the raisin bran and allow to stand for 5 minutes While waiting, sift flour, baking powder, cinnamon and salt together set aside
  • Step 3
    Stir the beaten eggs, honey and olive oil into the raisin bran mix
  • Step 4
    Add the dry ingredients to the raisin bran mix, stir until just moistened
  • Step 5
    Spoon the batter into twelve greased muffin pans Bake for 18-20 minutes until nice and brown
