Great tasting with a crumb topping. Very good for breakfast with a cup of coffee or a glass of milk.

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup fat free milk
  • 1/4 cup canola oil
  • 1 cup chopped,peeled apples
  • 1/4 cup raisins
  • CRUMB TOPPINGS
  • 2 tablespoons flour
  • 2 tablespoons quick cooking oats
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon cold butter or stick margarine

How To Make raisin apple muffins

  • Step 1
    In a bowl,combine the 1st 5 ingredients. Combine next 3 ingredients. Stir into dry ingredients,just until moistened. Fold in apples and raisins.
  • Step 2
    Coat muffin cups with non-stick cooking spray,or use paper liners. Fill 2/3 full.
  • Step 3
    FOR TOPPING: In a bowl,combine the flours,oats,& brown sugar;cut in butter until crumbly. Sprinkle over batter.
  • Step 4
    Bake 375 in a preheated oven for 15-20 minutes or until a toothpick comes out clean. Cool 5 minutes..Remove to a wire rack. Serve Warm (good at room temp. too.)
