These muffins have cream cheese in the middle of each one. A nice surprise when you bite into them.

Ingredients

  • 1 3/4 cups flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 large egg
  • 1/2 cup canned or cooked pumpkin
  • 1/2 cup canola oil
  • 1 package (3oz)cream cheese..cut into 12 pieces
  • STREUSAL TOPPING
  • 1/4 cup packed brown sugar
  • 1/4 cup chopped pecans
  • 1 teaspoon cinnamon
  • 1 tablespoon butter or margarine

How To Make pumpkin streusal muffins

  • Step 1
    Combine 1st 6 ingredients. In another bowl,beat egg; add milk,pumpkin,& oil. Stir in dry ingredients just until moistened. Fill 12 greased or paper lined muffin cups 1/2 full. Place 1 piece of cream cheese in each muffin. Top with remaining batter.
  • Step 2
    Combine packed brown sugar,pecans,& cinnamon. Cut butter into combined mix. Sprinkle over muffins. Bake 400 degrees 18-22 minutes or until muffins test done. Cool 5 minutes. Remove from pan to wire racks.Cool.
