Makes 18 Muffins
Ingredients
- MUFFINS
- 2 cups sugar
- 3 - eggs
- 1/2 cup vegetable oil
- 1 1/3 cups pure pumpkin
- 1 cup cake flour
- 1 cup all purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 cup raisins
- STREUSEL
- 4 tablespoons flour
- 4 tablespoons sugar
- 4 tablespoons brown sugar
- 1 teaspoon cinnamon
- 2 tablespoons cold butter
How To Make pumpkin muffins

Step 1Preheat oven to 350 degrees. Line muffin tins with papers.

Step 2Beat together sugar and eggs.

Step 3Add oil and pumpkin, mixing until smooth.

Step 4Add flours, baking soda, and spices, stirring well. Then fold in raisins.

Step 5Spoon into muffin pan about 3/4 full.

Step 6Streusel: Combine dry ingredients. Add butter and mash until it resembles coarse crumbs.

Step 7Sprinkle streusel on top of each muffin.

Step 8Bake 22-25 minutes until golden. Cool in pan 30 minutes.
