See my notes on my Pumpkin Apple Streusel Muffins. These pineapple nut muffins are a bit different - but we liked them in our house, so they made the cut too.

Ingredients
- 2 cups all purpose unbleached flour
- 1/4 cup nonfat dry milk powder
- 1 tablespoon baking powder
- 1 teaspoon sea salt
- 1/2 cup sugar
- 3 large eggs, beaten
- 1/2 cup canola oil
- 1 can crushed pineapple in its own juice 8 oz. can
- 1/2 cup pecans, chopped
How To Make pineapple nut muffins

Step 1Whisk together all the dry ingredients in a large bowl.

Step 2Whisk together the eggs, canola oil and pineapple in a medium bowl.

Step 3Add the liquid ingredients to the dry ingredients and stir together until just blended. Gently stir in the pecans.

Step 4Fill muffin cups about 2/3 full and then bake 12-15 minutes at 400? F until golden and they pass the toothpick test.
