orange popovers

This is a recipe given to me by Sarah Bertram- after a little haggling...my triple chocolate brownie recipe for this one.. I win! These are great for breakfast, serve with sweetened cream cheese or maple syrup... NOTE: You do know you can make all your popovers in muffin pans- they just look prettier in the popover pans!

Ingredients

  • 4 large eggs,beaten
  • 1 1/3 cups whole milk
  • 1/2 cup fresh orange juice
  • 2 tablespoons melted butter
  • 2 cups all purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 tablespoon grated orange peel

How To Make orange popovers

  • Step 1
    Preheat oven to 450^. Grease of spray well popover pans or muffin pans. Set aside.
  • Step 2
    In a bowl combine the beaten eggs, milk, orange juice and melted butter. In another bowl combine remaining 4 dry ingredients and orange peel.
  • Step 3
    Make a well in the dry ingredients and add the wet ingredient and gently mix ingredients together, until blended. Fill muffin pan cups 1/2 full (or the popover pans 1/2 full). and bake for 20 minutes. Turn heat down to 350^ and bake for about 20 minutes more or until well browned. Do not open oven door during entire baking time. Remove from oven carefully and using a toothpick of sharp knife poke a hole in the popover to let the steam out so they don't get soggy inside... let cool in pan for 5 minutes; then remove and enjoy.
