Some people in our family don't like raisins, but these muffins taste great with any number of substitutions. Our favorites are pineapple and apples. These muffins are not overly sweet.

Ingredients

  • 1 cup flour
  • 1/4 cup sugar
  • 1 1/2 teaspoons cinnamon
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup quick cooking rolled oats
  • 1/2 cup chopped raisins, see note
  • 1 large egg, beaten
  • 3/4 cup whole milk
  • 1 teaspoon vanilla
  • 3 tablespoons canola oil
  • TOPPING:
  • 2 tablespoons sugar
  • 2 teaspoons flour
  • 1 teaspoon cinnamon
  • 1 teaspoon melted butter

How To Make oatmeal muffins

  • Step 1
    NOTE: If you don't like raisins, you can substitute well-drained crushed pineapple, chopped apple, grated carrots, and/or nuts.
  • Step 2
    Preheat oven to 375 degrees. Line 12 muffin cups with cupcake liners, or just grease the muffin tin.
  • Step 3
    In a large bowl, sift the flour, sugar, cinnamon, baking powder, and salt. Add the oatmeal and raisins (or substitutes), stir to combine.
  • Step 4
    In a separate bowl, combine the beaten egg, milk, vanilla and oil. Slowly add to the dry ingredients, stirring just until moistened. Divide the batter evenly among the muffin cups, about 2/3 full.
  • Step 5
    Make the topping: combine all the ingredients in a small bowl. Sprinkle the mixture evenly over the filled muffin cups. Bake for 20 minutes, or until a toothpick inserted in the center comes out clean. Let cool on a wire rack.
