nutty muffins
Love to come up with different ingredients for food, especially muffins. I try to stay on the healthy side, not using white flour, but other kinds..there is alot you know. Nuts is a great source of protein and using agave necter instead of sugars..Here is one I make that everyone is crazy about. Give it try and let me know what you think.

Ingredients
- 3 cups spelt flour
- 1 tablespoon baking powder
- 1 tablespoon baking soda
- 1/4 cup agave necter or sugar
- 1 teaspoon sea/kosher salt
- 2 - eggs, beaten
- 1/2 cup chopped pecans
- 1/2 cup chopped almonds
- 1/2 cup chopped walnuts
- 1/3 cup corn oil
- 1 cup soy milk or regular milk
- 1 teaspoon ginger
- 1 teaspoon allspice
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
How To Make nutty muffins

Step 1Preheat the oven to 350 degrees..Mix all the dry ingredients together, including the spices and set aside Spelt is found in health stores, usually in bulk. Can find in Winco stores and Sprouts

Step 2Add all the other ingredients together, and mix them well. Add this to the dry ingredients and with hands mix it until all the ingredients are incorporated nicely together. it may not take all the milk, so add slowly to see if it is too much, adjust accordingly.

Step 3Place in pam sprayed muffin tins and bake for about 30 minutes or until knife inserted comes out clean. These can be use for any meal, with or without jam/jelly. Enjoy and as always, watch the spices and let me know opinion.
