No flour so it is gluten free. Low in carbs too. Very easy and quick. Heavier than a flour muffin but still tasty. Breakfast time or snack time it only takes a minute.

Ingredients

1/4c
flax meal
1/2tsp
baking powder
1 pkt
truvia or stevia or 1 tblsp. pure maple syrup
1 tsp
cinnamon
1 lge
egg
1 tsp
butter

How to Make Muffin in a Cup

Step-by-Step

  • 1Spray inside of coffee mug with cooking spray or grease inside of cup with butter. In a large mug (or small bowl if you prefer) mix dry ingredients. Add egg and butter. Mix well.
  • 2If using the small bowl you can put mixture into mug and place in microwave for 1 minute. Longer depending on the microwave.
  • 3Remove, slice and enjoy. These slices can be a pancake substitute just fine. Your creativity will have this recipe being your go to for a snack any time or any day.
    *Maple syrup can be a sugar substitute in this recipe as well. Maple syrup has vitamins and minerals. I like it better than honey.*
