These are the most dense, filling muffins ever. They are so moist it is amazing ! Freeze well and serve beautiful !

Ingredients

  • 1 cup flour
  • 1 cup oatmeal, uncooked
  • 1 1/4 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 2 cups shredded carrots
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup coconut
  • 1 - apple, peeled and shredded
  • 3 - eggs
  • 1 cup applesauce
  • 2 teaspoons vanilla extract

How To Make morning glory muffins

  • Step 1
    Mix all dry ingredients into a large bowl
  • Step 2
    Mix together all fruits, veggies and nuts in a smaller bowl
  • Step 3
    mix eggs, applesauce and vanilla together and add to dry ingredients.
  • Step 4
    mix in fruits, veggies and nuts.
  • Step 5
    spray or line muffin tins, place mix to fill each muffin cup.
  • Step 6
    Bake @ 350 degrees for 12 min or done.
  • Step 7
