These are the most dense, filling muffins ever. They are so moist it is amazing ! Freeze well and serve beautiful !

  • 1 c
    oatmeal, uncooked
  • 1 1/4 c
  • 2 tsp
    baking soda
  • 2 tsp
  • 1/4 tsp
  • 2 c
    shredded carrots
  • 1/2 c
  • 1/2 c
    chopped walnuts
  • 1/2 c
  • 1
    apple, peeled and shredded
  • 3
  • 1 c
  • 2 tsp
    vanilla extract

How to Make Morning Glory Muffins


  1. Mix all dry ingredients into a large bowl
  2. Mix together all fruits, veggies and nuts in a smaller bowl
  3. mix eggs, applesauce and vanilla together and add to dry ingredients.
  4. mix in fruits, veggies and nuts.
  5. spray or line muffin tins, place mix to fill each muffin cup.
  6. Bake @ 350 degrees for 12 min or done.
  7. Enjoy and share ! :)
