These are the most dense, filling muffins ever. They are so moist it is amazing ! Freeze well and serve beautiful !

Ingredients

flour
1 c
oatmeal, uncooked
1 1/4 c
sugar
2 tsp
baking soda
2 tsp
cinnamon
1/4 tsp
salt
2 c
shredded carrots
1/2 c
raisins
1/2 c
chopped walnuts
1/2 c
coconut
1
apple, peeled and shredded
3
eggs
1 c
applesauce
2 tsp
vanilla extract

How to Make Morning Glory Muffins

Step-by-Step

  • 1Mix all dry ingredients into a large bowl
  • 2Mix together all fruits, veggies and nuts in a smaller bowl
  • 3mix eggs, applesauce and vanilla together and add to dry ingredients.
  • 4mix in fruits, veggies and nuts.
  • 5spray or line muffin tins, place mix to fill each muffin cup.
  • 6Bake @ 350 degrees for 12 min or done.
  • 7Enjoy and share ! :)
