morning glory muffins
When I worked I would make these for many morning meetings. I think they really start out your day right. Warm and add some butter. So good!

Ingredients
- 2 eggs
- 2 teaspoons vanilla extract
- 1/4 cup milk
- 3/4 cup vegetable oil
- 1 cup flour
- 1 cup wheat flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 cup brown sugar
- 1 cup shredded apple
- 1 1/2 cups shredded carrots
- 1/2 cup shredded coconut, sweetened or unsweetened
- 1/2 cup raisins
- 1/2 cup chopped almonds
How To Make morning glory muffins

Step 1Wisk eggs, vanilla, milk, and veggie oil together in a big bowl.

Step 2Add flours, baking soda, cinnamon, salt, and brown sugar – then mix until all ingredients are moist.

Step 3Add remaining ingredients and mix well.

Step 4Either grease muffin pan or put muffin cups in. Divide into muffin pan, each muffin about ¾ full. Makes 18 muffins.

Step 5Preheat to 350 degrees, put muffins in. Reduce heat to 325 bake for 25 minutes (until toothpick comes out clean). Let cool for 5 minutes in pan, then transfer to cooling rack.
