When I worked I would make these for many morning meetings. I think they really start out your day right. Warm and add some butter. So good!

    vanilla extract
  • 1/4 c
  • 3/4 c
    vegetable oil
  • 1 c
  • 1 c
    wheat flour
  • 2 tsp
    baking soda
  • 2 tsp
  • 1/2 tsp
  • 1 c
    brown sugar
  • 1 c
    shredded apple
  • 1 1/2 c
    shredded carrots
  • 1/2 c
    shredded coconut, sweetened or unsweetened
  • 1/2 c
  • 1/2 c
    chopped almonds

How to Make Morning Glory Muffins


  1. Wisk eggs, vanilla, milk, and veggie oil together in a big bowl.
  2. Add flours, baking soda, cinnamon, salt, and brown sugar – then mix until all ingredients are moist.
  3. Add remaining ingredients and mix well.
  4. Either grease muffin pan or put muffin cups in. Divide into muffin pan, each muffin about ¾ full. Makes 18 muffins.
  5. Preheat to 350 degrees, put muffins in. Reduce heat to 325 bake for 25 minutes (until toothpick comes out clean). Let cool for 5 minutes in pan, then transfer to cooling rack.
