Ingredients

1-`1/4 cplus 2 tbsp sugar, divided

1 sticksoftened butter

2 largeeggs

1 cplus 1 tbsp flour

1 cwhole wheat flour

2 tspbaking powder

1/2 c1% milk

1 tspvanilla

112 oz pkg frozen wild blueberries
How to Make Moms special blueberry muffins.
- Heat oven to 375. Spray a muffin pan w/ cooking spray or use liners. In lg bowl, w/ mixer, Beat 1-1/4 cups sugar and butter until creamy. Add eggs, one at a time. Add both flours, but not the 1 tbsp of flour, and baking powder.
- Beat well. Add milk and vanilla. Mash 1/2 cup berries and stir into batter. In bowl, toss remaining berries w/ 1 tbsp flour. Gently fold berries into batter.
- Spoon batter into muffin cups. Sprinkle w/ remaining sugar. Bake 25-30 mins, or until a toothpick inserted in center comes out clean.
