My hubby loves these moist muffins and raves about the topping!

Ingredients

  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large bananas, mashed
  • 3/4 cup sugar
  • 1 - egg, lightly beaten
  • 1/3 cup melted butter
  • 1/3 cup packed, light brown sugar
  • 2 tablespoons flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon butter

How To Make moist banana muffins w/ crumb topping

  • Step 1
    Heat oven to 375. Lightly spray 10 muffin cups w/ cooking spray. in lg bowl, mix together flour, baking soda, baking powder and salt.
  • Step 2
    In another lg bowl, beat bananas, sugar, egg and melted butter until somewhat smooth Stir the banana mix into flour mix just until moistened. Spoon batter into muffin cups 3/4 a way.
  • Step 3
    In small bowl, mix together brown sugar, flour, and cinnamon. Cut in 1 tbsp butter until crumbly. Sprinkle over top of each muffin cup. Bake 20 mins, or until a toothpick inserted in center comes out clean.
