Ingredients
- DRY INGREDIENTS:
- 3/4 cup whole wheat flour
- 1/2 cup oats, uncooked
- 3 tablespoons wheat germ
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- WET INGREDIENTS:
- 1/2 cup oil (corn, vegetable or canola)
- 2 large eggs
- 1 medium carrot, grated
- 1 large apple, peeled and grated
- 2 teaspoons vanilla
- 1/2 cup shredded coconut
- 1/3-1/2 cup raisins
- 1/3 cup chopped nuts (i use walnuts)
How To Make meal in a muffin

Step 1In a large bowl, mix dry ingredients. In a seperate bowl mix remaining ingredients.

Step 2Mix wet and dry together, a little at a time until well moisened.

Step 3Spoon equal amounts in 12 greased or papered muffin tins. Bake at 375 degrees until done, about 20 minutes. Do not overbake.

Step 4At higher altitudes decrease temp to 350 and bake 25-30 min.
