mama's banana bread

This recipe was one of my favorites passed down from my mother. Whether on a rainy day with a hot cup of warm cocoa, or waking up to eat for breakfast, this bread is an instant classic!

Ingredients

  • 1 3/4 cups flour
  • 2/3 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup butter, softened
  • 2 - eggs, beaten
  • 1 cup mashed bananas (2 medium ripe bananas)
  • 1/2 cup pecans or walnuts, chopped (optional)

How To Make mama's banana bread

  • Step 1
    Preheat oven to 350*. Grease and flour 9x5 loaf pan. In large bowl, use a whisk and mix all dry ingredients.
  • Step 2
    With a pastry blender, cut in shortening until mixture resembles course crumbs. With a fork, stir in mashed bananas & eggs until blended. (Also add nuts here if desired).
  • Step 3
    Spread batter evenly in pan. Bake 55 minutes to 1 hour until toothpick inserted in center comes out clean.
