Ingredients

1 c
all purpose flour (if u want them denser, use cake flour instead)
1 c
whole wheat flour
2/3 c
torbinado sugar (u can use white if you prefer)
2 1/2 tsp
baking powder
1/4 tsp
baking soda
1/2 tsp
salt
2 tsp
cinnamon, ground
1 c
skim milk
1/2 c
applesauce
1 Tbsp
canola oil
2
egg whites
1 c
frozen blueberries
1 c
dried peaches, cut

TOPPING

1/4 c
sugar
1 tsp
cinnamon, ground

How to Make Lowfat Blueberry Peach Muffin

Step-by-Step

  • 1While preheating your oven to 400 degrees, sift flours, sugar, baking powder, salt, baking soda and cinnamon.
  • 2In separate bowl, mix milk, applesauce, oil and eggwhites.
  • 3Mix the wet ingredients into the dry, stirring til just blended. Stir the fruit into the blend and pour into muffin tins. Sprinkle 1 teaspoon of topping onto each muffin and bake for 20 mins.
