lowfat blueberry peach muffin

These little guys are my original recipe-a healthier and more wholesome spin on a great muffin. Enjoy!

Ingredients

  • 1 cup all purpose flour (if u want them denser, use cake flour instead)
  • 1 cup whole wheat flour
  • 2/3 cup torbinado sugar (u can use white if you prefer)
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon, ground
  • 1 cup skim milk
  • 1/2 cup applesauce
  • 1 tablespoon canola oil
  • 2 - egg whites
  • 1 cup frozen blueberries
  • 1 cup dried peaches, cut
  • TOPPING
  • 1/4 cup sugar
  • 1 teaspoon cinnamon, ground

How To Make lowfat blueberry peach muffin

  • Step 1
    While preheating your oven to 400 degrees, sift flours, sugar, baking powder, salt, baking soda and cinnamon.
  • Step 2
    In separate bowl, mix milk, applesauce, oil and eggwhites.
  • Step 3
    Mix the wet ingredients into the dry, stirring til just blended. Stir the fruit into the blend and pour into muffin tins. Sprinkle 1 teaspoon of topping onto each muffin and bake for 20 mins.
