low carb minute muffin

While low carbing, I missed bread BAD. I came across a recipe for a minute muffin but didn't like how it tasted like a sponge so I tweaked it. I still eat these for breakfast because it fills me up and helps me get my fiber in.

Ingredients
- 1/4 cup flax meal
- 3/4 scoop whey protein powder
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 - large egg, beaten
- 1 teaspoon butter
- 3 tablespoons davinci sugar free caramel syrup
How To Make low carb minute muffin

Step 1Mix dry ingredients in a coffee mug or small bowl (I use a salsa bowl)

Step 2In a separate bowl, beat egg, add S.F. syrup and butter. Mix well. (Can use 1 tsp flavored extract and 1 pkt of splenda or stevia in place of s.f. syrup).

Step 3Add the egg mixture into the dry mix and blend well.

Step 4Microwave for 1 minute and remove from mug or bowl immediately. (Can eat with butter, sugar free maple syrup or mix 2 tbsp of cream cheese with 1 pkt of splenda and frost.)

Step 5Note: Total calories: 210; total net carbs 1.5. Can replace cinnamon with cocoa for a chocolate muffin.
