kathy's oatmeal muffins
This recipe is the easiest and quickest to make. As my kids grew they would wake to the smell of sweet, hot muffins. Mix and bake in less than 20 minutes and you look like a star. I now serve it in my retirement homes I run and the residents enjoy them a lot.

Ingredients
- 1 cup rolled oats
- 1 cup buttermilk (add 1 teaspoon vinegar to milk)
- 1 cup all purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup oil
- 1/2 cup brown sugar (packed)
- 1 - egg - well beaten
How To Make kathy's oatmeal muffins

Step 1Combine oats and buttermilk and let stand.

Step 2Combine all dry ingredients.

Step 3Add, oil, sugar and eggs to the oats and milk mixture.

Step 4Blend in dry ingredients only to moisten. Spoon into muffin cups and bake in a 350 degree oven for approximately 15 minutes. (depending on your oven)
