Ingredients
- MUFFINS
- 3/4 cup dried cherries
- 1/2 cup canola oil
- 1/2 cup brown sugar
- 3 large eggs
- 1/4 cup honey
- 1 1/2 cups buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 2/3 cups flour
- 2 cups wheat bran
- 1/2 cup chopped almonds
- HONEY GLAZE
- 2 tablespoons butter
- 2 tablespoons honey
How To Make honey cherry almond bran muffins

Step 1To make the muffins, place cherries in heat proof bowl and cover with bowling water. Let stand for 10 minutes. Drain and roughly chop. Set aside.

Step 2Preheat oven to 400 degrees F.

Step 3Spray 12 cup jumbo muffin tin with cooking spray. Line regular muffin pan with paper liners.

Step 4Whisk together oil, brown sugar and eggs until smooth.

Step 5Add honey, buttermilk and vanilla. Stir until well combined.

Step 6Sprinkle baking powder and baking soda over the top of the egg mixture and stir until combined.

Step 7Add the flour and wheat bran and stir until well mixed.

Step 8Fold in the cherries and almonds.

Step 9Scoop the batter into the muffin pans.

Step 10Bake 5 minutes, then reduce heat to 375 degrees.

Step 11Bake for 10 - 15 minutes. (Small muffins 10-12 and large 13-15.)

Step 12Cool in muffin pan for 5 minutes.

Step 13Prepare Glaze: Combine butter and honey in small microwave-safe bowl. Microwave on high for 30-40 seconds, until butter is melted. Stir well until smooth.

Step 14Brush the honey butter on the tops of the muffins after removed from pan.
