Perfect with a cup of tea. This recipe makes 6 jumbo muffins plus 6 regular size muffins, or 16 regular size muffins.

  • MUFFINS
  • 3/4 c
    dried cherries
  • 1/2 c
    canola oil
  • 1/2 c
    brown sugar
  • 3 lg
    eggs
  • 1/4 c
    honey
  • 1 1/2 c
    buttermilk
  • 1 tsp
    vanilla extract
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 2/3 c
    flour
  • 2 c
    wheat bran
  • 1/2 c
    chopped almonds
  • HONEY GLAZE
  • 2 Tbsp
    butter
  • 2 Tbsp
    honey

How To Make honey cherry almond bran muffins

    To make the muffins, place cherries in heat proof bowl and cover with bowling water. Let stand for 10 minutes. Drain and roughly chop. Set aside.

    Preheat oven to 400 degrees F.

    Spray 12 cup jumbo muffin tin with cooking spray. Line regular muffin pan with paper liners.

    Whisk together oil, brown sugar and eggs until smooth.

    Add honey, buttermilk and vanilla. Stir until well combined.

    Sprinkle baking powder and baking soda over the top of the egg mixture and stir until combined.

    Add the flour and wheat bran and stir until well mixed.

    Fold in the cherries and almonds.

    Scoop the batter into the muffin pans.

    Bake 5 minutes, then reduce heat to 375 degrees.

    Bake for 10 - 15 minutes. (Small muffins 10-12 and large 13-15.)

    Cool in muffin pan for 5 minutes.

    Prepare Glaze: Combine butter and honey in small microwave-safe bowl. Microwave on high for 30-40 seconds, until butter is melted. Stir well until smooth.

    Brush the honey butter on the tops of the muffins after removed from pan.
