herb muffins (using dried herbs)

These go great with soup. You can use any variation of dried herbs totaling 3 teaspoons. This is easily doubled.

Ingredients

  • 1 cup all purpose flour
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried chives
  • 1 teaspoon dried rosemary
  • 1 egg
  • 1/2 cup buttermilk
  • 2 tablespoons butter, melted
  • 1 teaspoon sugar
  • 1/4 cup grated parmesan cheese

How To Make herb muffins (using dried herbs)

  • Step 1
    Preheat oven to 400F. Coat 6 standard size muffing cups with nonstick cooking spray.
  • Step 2
    Combine dry ingredients in a large mixing bowl .
  • Step 3
    In another smaller bowl combine egg, buttermilk, melted butter, sugar and parmesan. Mix well.
  • Step 4
    Pour liquid mixture into dry ingredients, and stir just until blended. Do not over mix.
  • Step 5
    Fill each muffin cup about 2/3 full.
  • Step 6
    Bake 15 to 20 minutes.
  • Step 7
    Cool a bit on wire rack and then turn them out, and serve warm.
