herb muffins (using dried herbs)
These go great with soup. You can use any variation of dried herbs totaling 3 teaspoons. This is easily doubled.

Ingredients
- 1 cup all purpose flour
- 1/2 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon dried oregano
- 1 teaspoon dried chives
- 1 teaspoon dried rosemary
- 1 egg
- 1/2 cup buttermilk
- 2 tablespoons butter, melted
- 1 teaspoon sugar
- 1/4 cup grated parmesan cheese
How To Make herb muffins (using dried herbs)

Step 1Preheat oven to 400F. Coat 6 standard size muffing cups with nonstick cooking spray.

Step 2Combine dry ingredients in a large mixing bowl .

Step 3In another smaller bowl combine egg, buttermilk, melted butter, sugar and parmesan. Mix well.

Step 4Pour liquid mixture into dry ingredients, and stir just until blended. Do not over mix.

Step 5Fill each muffin cup about 2/3 full.

Step 6Bake 15 to 20 minutes.

Step 7Cool a bit on wire rack and then turn them out, and serve warm.
