Healthy Snak'n Muffins

Wendy Rusch

I have parents and friends that are diabetics...and am always reminded to try to create diabetic friendly recipes...I came by this recipe the other day, via The Pioneer Woman.

This muffin is really good!!! It has wonderful flavors!

If I did the calculations right, there is less than 1/2 gram of fat in each muffin and a little over 1 tsp. of brown sugar per muffin. AND you could opt to use Splenda Brown Sugar too.
