Ingredients For guiltless cherry-almond struesel muffins

  • 1 1/2 c
    all purpose flour
  • 1 c
    whole wheat flour
  • 2 Tbsp
    milled flax seed (optional)
  • 1 c
    sugar (may use splenda)
  • 1 Tbsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 3/4 c
    skim milk
  • 1/2 c
    lowfat buttermilk
  • 1/3 c
    light ricotta cheese
  • 2 Tbsp
    canola oil
  • 1 Tbsp
    vanilla extract
  • 1 tsp
    almond extract
  • 3 lg
    egg whites (or 2 whole eggs)
  • 2 c
    fresh, pitted cherries 1/4'd, or frozen (easier)
  • cooking spray
  • 1/4 c
    all purpose flour
  • 1/2 c
    sliced almonds
  • 1 Tbsp
    brown sugar
  • 1 Tbsp
    butter (melted)

How To Make guiltless cherry-almond struesel muffins

    Preheat oven to 375 degrees
  • 2
    Combine 1st 7 ingredients into a bowl; Make a well in the center. Combine milk and next 6 ingredients, (milk thru eggs) stir well with wire whisk, Add to flour mixture, stir until moistened. Gently fold in cherries. Spoon batter into 18 muffin cups coated with cooking spray.

    Combine the 1/4 cup flour and rest of ingredients together, and sprinkle evenly over batter. Bake at 375 for 18 mins or until done. Remove from pans immediatly and cool on a wire rack.
