guiltless cherry-almond struesel muffins

Since I'm diabetic, I'm always on the look out for recipes that I can eat with my family, and for them to enjoy it too. This one was a hit! don't let the size of the list scare you, it's an oh, so easy recipe. Enjoy!

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 cup whole wheat flour
  • 2 tablespoons milled flax seed (optional)
  • 1 cup sugar (may use splenda)
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup skim milk
  • 1/2 cup lowfat buttermilk
  • 1/3 cup light ricotta cheese
  • 2 tablespoons canola oil
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract
  • 3 large egg whites (or 2 whole eggs)
  • 2 cups fresh, pitted cherries 1/4'd, or frozen (easier)
  • - cooking spray
  • 1/4 cup all purpose flour
  • 1/2 cup sliced almonds
  • 1 tablespoon brown sugar
  • 1 tablespoon butter (melted)

How To Make guiltless cherry-almond struesel muffins

  • Step 1
    Preheat oven to 375 degrees
  • Step 2
    Combine 1st 7 ingredients into a bowl; Make a well in the center. Combine milk and next 6 ingredients, (milk thru eggs) stir well with wire whisk, Add to flour mixture, stir until moistened. Gently fold in cherries. Spoon batter into 18 muffin cups coated with cooking spray.
  • Step 3
    Combine the 1/4 cup flour and rest of ingredients together, and sprinkle evenly over batter. Bake at 375 for 18 mins or until done. Remove from pans immediatly and cool on a wire rack.
