Ingredients

1 1/2 call purpose flour

1 cwhole wheat flour

2 Tbspmilled flax seed (optional)

1 csugar (may use splenda)

1 Tbspbaking powder

1 tspbaking soda
-
1/2 tspsalt
-
3/4 cskim milk
-
1/2 clowfat buttermilk
-
1/3 clight ricotta cheese
-
2 Tbspcanola oil
-
1 Tbspvanilla extract
-
1 tspalmond extract
-
3 largeegg whites (or 2 whole eggs)

2 cfresh, pitted cherries 1/4'd, or frozen (easier)

·cooking spray

1/4 call purpose flour

1/2 csliced almonds
-
1 Tbspbrown sugar

1 Tbspbutter (melted)
How to Make Guiltless Cherry-Almond Struesel Muffins
- Preheat oven to 375 degrees
- Combine 1st 7 ingredients into a bowl; Make a well in the center. Combine milk and next 6 ingredients, (milk thru eggs) stir well with wire whisk, Add to flour mixture, stir until moistened. Gently fold in cherries. Spoon batter into 18 muffin cups coated with cooking spray.
- Combine the 1/4 cup flour and rest of ingredients together, and sprinkle evenly over batter. Bake at 375 for 18 mins or until done. Remove from pans immediatly and cool on a wire rack.
