guiltless cherry-almond struesel muffins

Since I'm diabetic, I'm always on the look out for recipes that I can eat with my family, and for them to enjoy it too. This one was a hit! don't let the size of the list scare you, it's an oh, so easy recipe. Enjoy!

Ingredients
- 1 1/2 cups all purpose flour
- 1 cup whole wheat flour
- 2 tablespoons milled flax seed (optional)
- 1 cup sugar (may use splenda)
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup skim milk
- 1/2 cup lowfat buttermilk
- 1/3 cup light ricotta cheese
- 2 tablespoons canola oil
- 1 tablespoon vanilla extract
- 1 teaspoon almond extract
- 3 large egg whites (or 2 whole eggs)
- 2 cups fresh, pitted cherries 1/4'd, or frozen (easier)
- - cooking spray
- 1/4 cup all purpose flour
- 1/2 cup sliced almonds
- 1 tablespoon brown sugar
- 1 tablespoon butter (melted)
How To Make guiltless cherry-almond struesel muffins

Step 1Preheat oven to 375 degrees

Step 2Combine 1st 7 ingredients into a bowl; Make a well in the center. Combine milk and next 6 ingredients, (milk thru eggs) stir well with wire whisk, Add to flour mixture, stir until moistened. Gently fold in cherries. Spoon batter into 18 muffin cups coated with cooking spray.

Step 3Combine the 1/4 cup flour and rest of ingredients together, and sprinkle evenly over batter. Bake at 375 for 18 mins or until done. Remove from pans immediatly and cool on a wire rack.
