Since I'm diabetic, I'm always on the look out for recipes that I can eat with my family, and for them to enjoy it too. This one was a hit! don't let the size of the list scare you, it's an oh, so easy recipe. Enjoy!

Ingredients For guiltless cherry-almond struesel muffins

1 1/2 call purpose flour

1 cwhole wheat flour

2 Tbspmilled flax seed (optional)

1 csugar (may use splenda)

1 Tbspbaking powder

1 tspbaking soda

1/2 tspsalt
-
3/4 cskim milk
-
1/2 clowfat buttermilk

1/3 clight ricotta cheese
-
2 Tbspcanola oil
-
1 Tbspvanilla extract
-
1 tspalmond extract
-
3 lgegg whites (or 2 whole eggs)

2 cfresh, pitted cherries 1/4'd, or frozen (easier)

cooking spray
-
1/4 call purpose flour

1/2 csliced almonds
-
1 Tbspbrown sugar

1 Tbspbutter (melted)
How To Make guiltless cherry-almond struesel muffins

1Preheat oven to 375 degrees

2Combine 1st 7 ingredients into a bowl; Make a well in the center. Combine milk and next 6 ingredients, (milk thru eggs) stir well with wire whisk, Add to flour mixture, stir until moistened. Gently fold in cherries. Spoon batter into 18 muffin cups coated with cooking spray.

3Combine the 1/4 cup flour and rest of ingredients together, and sprinkle evenly over batter. Bake at 375 for 18 mins or until done. Remove from pans immediatly and cool on a wire rack.
