This recipe comes from the Daniel Diet. They are delicious, & you don't know they are gluten free! They are epecially good for breakfast.

1 lb calmond meal

1/2 tspsalt

1 tspbaking powder

1/2 tspcinnamon

1/2 tspnutmeg
-
2eggs
-
1/2 cpumpkin

4 Tbspbutter

1 tspvanilla
How To Make gluten free pumpkin miffins

1Place almonds in a food processor, pulse until they are fine & powdery. Measure 2 1/2 cups for muffins.

2combine all of the ingredients(except almond meal) Beat for 3 minutes. Add almond meal, mix well. Pour into paper lined muffin tins. Bake at 350 degrees for 30 minutes. You may add raisins or chopped nut if desired.
