This recipe comes from the Daniel Diet. They are delicious, & you don't know they are gluten free!
They are epecially good for breakfast.

Ingredients

1 lb c
almond meal
1/2 tsp
salt
1 tsp
baking powder
1/2 tsp
cinnamon
1/2 tsp
nutmeg
2
eggs
1/2 c
pumpkin
4 Tbsp
butter
1 tsp
vanilla

How to Make GLUTEN FREE PUMPKIN MIFFINS

Step-by-Step

  • 1Place almonds in a food processor, pulse until they are fine & powdery. Measure 2 1/2 cups for muffins.
  • 2combine all of the ingredients(except almond meal)
    Beat for 3 minutes. Add almond meal, mix well.
    Pour into paper lined muffin tins. Bake at 350 degrees for 30 minutes.

    You may add raisins or chopped nut if desired.
