This recipe comes from the Daniel Diet. They are delicious, & you don't know they are gluten free! They are epecially good for breakfast.

Ingredients

  • 1 lb cup almond meal
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 - eggs
  • 1/2 cup pumpkin
  • 4 tablespoons butter
  • 1 teaspoon vanilla

How To Make gluten free pumpkin miffins

  • Step 1
    Place almonds in a food processor, pulse until they are fine & powdery. Measure 2 1/2 cups for muffins.
  • Step 2
    combine all of the ingredients(except almond meal) Beat for 3 minutes. Add almond meal, mix well. Pour into paper lined muffin tins. Bake at 350 degrees for 30 minutes. You may add raisins or chopped nut if desired.
