I came across this English Muffin Loaf in an old church cookbook. So I had to try, as I just love english muffin bread! Toasted with butter and a yummy jam! :o) It is wonderful! Better than store bought of course, you know, because you made it yourself! lol And its easy...you don't need to be a bread maker to be able to make this!!!

Ingredients For english muffin loaf

  • 2 pkg
    yeast or 4 1/2 tsp
  • 2 Tbsp
    sugar
  • 2 tsp
    sea salt
  • 1/2 tsp
    baking soda
  • 5 1/2 - 6 c
    bread flour
  • 2 c
    whole or 2% milk
  • 1/2 c
    water
  • 1/4 c
    cornmeal
  • LOAF WITH RAISINS, OPTIONAL
  • 3/4 c
    raisins or craisins
  • 1 c
    water
  • 1 tsp
    cinnamon
  • CROUTON INSTRUCTIONS IN STEP 3

How To Make english muffin loaf

    Grease or spray 2 - 8x4 loaf pans then sprinkle with 1/2 the cornmeal making a light coating in each pan. Set aside. In a large bowl, whisk together yeast, sugar, salt, soda and 3 c of flour, set aside. In a small sauce pan, heat together milk and water to 120 degrees. Can be done in the microwave too. Add wet ingredients to dry and beat well. Stir in remaining flour to make a stiff batter. Evenly divide batter between prepared pans. Cover with plastic wrap and let rise 45 minutes. At 30 minutes turn on oven, preheating to 400 degrees. When preheated, sprinkle loaves with remaining cornmeal then bake loaves for 25 minutes. Remove from oven, remove loaves from pans right away to cooling racks.

    To Add Raisins: Before you start anything. Place raisins and water into a glass bowl, microwave 3 minutes. Let stand at least 15 minutes. Drain. Set aside. Continue with Step 1. In step 2, add cinnamon when you add salt. Add raisins in step 3 when you add remaining flour. Continue per directions.
