These are so light and fluffy and can be served for breakfast or anytime during the day. You can serve them plain for a less sugary treat or sweeter with the glaze if you like. I took them to our dog show breakfast every year and they were gone before any other breakfast item.
1Lightly grease a muffin tin with vegetable oil or spray.•In a large bowl, beat together sugar and egg until light in color. Add vegetable oil, milk, and vanilla to sugar mixture and combine.
2In a separate bowl, combine flour, baking powder, salt, and nutmeg. Then pour into liquid mixture and stir to combine.
3Fill muffin cups 3/4 full, and bake in a 350 degree preheated oven for 18-20 minutes, or until a tester inserted in the middle comes out clean.
4FOR GLAZE: Mix all ingredients with melted butter. Thin as needed with milk. Drizzle over cooled muffins. Should harden in 20 minutes.
5MINI MUFFINS • Set the timer for 8 minutes less than the recipe calls for, which would be about 10-12 minutes.
• Begin checking the muffins when the timer goes off by sticking a toothpick into the thickest part of the muffin and pull it out. If the toothpick is clean, then the muffins are done
