Ingredients
- 1-1/4 cup plus 2 tbsp light brown sugar
- 1/2 cup chopped walnuts
- 2 cups all purpose flour
- 1 cup whole wheat flour
- 4 teaspoons baking powder
- 1-1/3 cup 1% milk
- 2 large eggs
- 1 stick butter, softened
- 1-1/2 cup chopped, fresh cranberries
- 1 teaspoon orange zest
How To Make cranberry-nut brunch muffins

Step 1Heat oven to 400. Lightly spray 12 muffin cups w/ cooking spray. In small bowl, combine 2 tbsp brown sugar and walnuts.

Step 2In lg bowl, combine flours, remaining brown sugar and baking powder. In another bowl, whisk together eggs and milk. Add egg mix to flour mix. Add butter and stir until just combined.

Step 3Fold in cranberries and orange zest. Pour mix into muffin cups, 2/3 full. Sprinkle w/ walnut mix. Bake 20 mins, or until a toothpick inserted in center comes out clean.
